When you get a craving for a good old-fashioned country breakfast head to Eggington’s for breakfast or brunch. Make sure you ask to sit in Maddie’s section. She is young, but she knows how to butter you up and make you laugh. She even has a Southern drawl to complete your experience.
For a farmer-in-the-dell type of breakfast, order the traditional eggs, biscuits and gravy, bacon, and orange juice. If you are not worried about calories, try the cheesy hash browns. Eggington’s knows hash browns should be, crispy, not wimpy. The chef can cook an egg to your preference and do it right.
If you enjoy a healthy hippie breakfast, the banana split is an excellent choice. Your dish comes filled with layers of low-fat vanilla yogurt, crunchy granola & fresh strawberries, blueberries & bananas. After eating this specialty, you may get the urge to go home and dig out your old tie-dyed T-Shirt.
Sunshine yellow painted walls inside the restaurant make everything cheerful. Brightly colored art is everywhere and contrasts brilliantly against the vivid backdrop.
If you tell Maddie she is an excellent waitress, her eyes will sparkle, a giggle will escape from under her mask, and she will say, “Thank you. I am an egg-cellent server.”
Next time you wake up wanting a traditional country breakfast, or maybe a banana pecan waffle, head to Eggington’s at 737 W. Danforth Road, Edmond, Ok.
